18 Chive Recipes You've Got to Try

Who doesn’t love fresh chives?

I’m in the middle of a massive harvest of chives from my own garden

I feel like no matter how much I harvest, I just can’t get caught up! These plants are absolutely exploding.

To prevent my head from exploding from chive overwhelm, I decided to put them all to good use and started researching the best chive recipes I could find. 

If you’re looking for the best ways to use up all those chives, here are some of my all-time favorite recipes for you to try.

What Are Chives Mostly Used For?

Before we dive into the best chive recipes, here’s a quick overview of this fun herb:

  • Chives are mostly used for culinary purposes and are easy to grow in just about any cool climate garden.

  • The leaves and stalks of chives can be eaten fresh or cooked.

  • They add flavor to salads, soups, sauces, and other dishes.

  • Chive blossoms are also edible and make a colorful garnish on food plates.

What Can You Do With Chives?

Here are some of my all-time favorite chive recipes for you to try!

1. Sour Cream & Chive Mashed Potatoes

So I’ll be honest - I tried to make these a couple of weeks ago with fresh chives and I think my chives were just a little bit too ripe for this recipe. But I’ve made it with dehydrated chives and it was absolutely perfect.

2. Garlic Chive Pesto

This recipe is perfect for fish! Or...eating on a spoon. No judgment.

3. Chive Dressing for Fish

This chive dressing is a great way to spice up your typical boring fish recipe when you just don’t have any other ideas. It’s really easy and a great simple dinner idea.

4. Chive Pancakes

When I was a little kid, I stayed every day after school (and all day during the summer) with a wonderful woman who became, essentially, a third grandmother to me. She used to make these chive pancakes all the time - I’m not sure if it’s the exact same recipe, but as far as my tastebuds go, it’s pretty close to what I remembered.

5. Chive Butter

Chive butter is perfect on top of biscuits, meat, and well...basically everything. It’s super easy to make, too - check out the recipe at The Gardening Cook. 

6. Chive Vinaigrette

Looking for a way to spritz up your salad - without all the calories of a heavy dressing? This Chive Vinaigrette is the perfect solution.

7. Baked Ricotta with Chives, Garlic, and Lemon

Baked ricotta is a great recipe to try when you want to impress your guests...but also don’t want to try that hard! It goes great as a dip with crackers or even when spread on fresh sourdough. Yum…

8. Chive and Egg Stir-Fry 

Eat it for breakfast, eat it for lunch...who cares? Whenever you decide to whip up this recipe, trust me, you’ll love it.

9. Garlic Chive Butter Potatoes

This recipe calls for baby potatoes, but I’ve also made it with full-sized red potatoes. No reason to believe it wouldn’t work on just about any kind of spud!

10. Cheese, Spring Onion, and Chive Brioche Buns

This recipe calls for the use of a cast-iron skillet, which I absolutely adore. If you don’t already have a cast iron pan, pick one up here. There are so many benefits to using one of these pans for your cooking - aside from the fact, of course, that they make your food taste pretty awesome.

11. Lemony Chive Risotto

Risotto is probably my favorite way to use up chicken stock. This recipe calls for white wine instead of stock, but as you know, you can easily substitute them for each other. This risotto pairs well with chicken and fish, but I’d eat it as an entree all by itself, too.

12. Hot Bacon Cheddar Chive Dip

Another appetizer perfect for the holidays? This one! Save up all your chives (you might want to consider dehydrating them) for this savory treat.

13. Cheddar and Chive Cheese Ball

Nothing says party like a cheeseball. Whip up a couple of these to impress a crowd!

Chive blossom oil and vinegar is an easy infusion recipe that you can later use to make salad dressings...or as a condiment worthy of respect on its own!

If you ask me, these biscuits taste a lot like the famous ones over at Red Lobster. But they’re better, because YOU made them...and...you know...CHIVES.

16. Zucchini Pancakes with Bacon and Chives

Zucchini pancakes are one of the best ways to use up all the leftover zucchini from your garden  -and these savory treats also allow you to use up those chives! Add some bacon to satisfy the carnivores at your dinner table, and you’ll be good to go.

17. Spring Herb Popcorn

If chives aren’t the only herb on your mind, you might want to whip up a batch of this tantalizing popcorn. It calls for chives and dill, but you could add any herb you want for a truly spectacular snack.

18. Asparagus, Goat Cheese, and Lemon Pasta with Chives and Pine Nuts

There’s a lot going on in this springtime pasta dish  - but you’ve got to give it a try. It’s a great way to put all that asparagus to use, and all calls for a fair amount of chives.
